We swapped out jalapeños for roasted poblanos to get rid of the spiciness, and made it a bit creamier and richer in texture so it would stay on top of the patty. Very excited for this dish!

This is a well-balanced burger and one of my favorite to make for myself. The BBQ sauce adds a nice bit of heat and sweetness to the rich, gooey pimento cheese. The brioche bun and perfectly lacey smashed patty all work together to make a nice balance of texture and flavor.
